Born into the rich culinary heritage of northern Italy, Enrico Dacasto is a master artisanal baker and culinary entrepreneur whose life’s work is defined by an uncompromising reverence for tradition, time, and taste. Renowned for his expertise in the meticulous art of long-fermentation baking and natural mother yeast (lievito madre), Enrico has spent decades perfecting the delicate balance of texture and flavour that defines true Italian gastronomy.

With La Baciata & Co., Enrico brings his sophisticated, slow-food philosophy to a contemporary gourmet canvas. The concept is an elegant celebration of Italy’s most exceptional street food traditions, elevated for the discerning palate.
